Most of the 21 hectares of vines are located to the east of the appellation, in well-known enclaves such as Le Creau, Pignon and Montpertuis. Natural yeasts, whole bunches and foudre ageing all ensure a perfect expression of these old vines, with the young wine in this instance exhibiting notes of Bovril, roasted herbs, dark chocolate and macerated plums.
