Description

This sparkling wine is a commemorative edition of the centenary of Caves São João made exclusively from the Pinot Noir grape variety. After a very delicate pressing of the grapes, harvested at the end of August, the must fermented for 15 days in stainless steel vats at controlled temperature.

The elaboration, following the classic method, began in March 2016 with the tirage with free yeasts, and the refermentation took place in cellars for 25 days at 14ºC, which was followed by a period of ageing in bottle, on lees, of 48 months, for the first degorged batch, in May 2020. It has a yellow colour with plumy nuances. The aroma of toasted almonds, toast, dried flowers, butter biscuits, brioche, dried figs, honey, citrus peel, candied fruit, chalk, and hints of red fruit dominate the bouquet of this very rich and complex sparkling wine. With a good ageing potential, it is ideal to accompany fish, even with sauces, poultry and other white meats, venison, cheeses, among many other delicacies.
