This sparkling wine is a commemorative edition of the centenary of Caves São João made exclusively from the Pinot Noir variety. After a very delicate pressing of the grapes, harvested at the end of August, the must fermented for 15 days in stainless steel vats at controlled temperature. The elaboration, following the classic method, started in March 2016 with the draft with free yeasts, and the fermentation took place in the basement for 25 days at 14ºC, followed by a period of aging in bottle, on lees, of 48 months, for the first depreciated batch, in May 2020. It presents a yellow color with leaden nuances. In the aroma we identify roasted almonds, toasts, dried flowers, butter cookies, brioche, dried figs, honey, citrus peel, candied fruits, chalk and red fruit remnants that dominate the aroma of this very rich and complex sparkling wine. It has a dry attack and excellent texture and creaminess, also showing great taste persistence. With a good aging potential, it is ideal to accompany fish, even with sauces, poultry and other white meats, venison, cheeses, among many other delicacies.
