Description
Virgin Olive Oil is obtained from the fruit of the olive tree solely by mechanical or other physical processes, in conditions that do not alter the Olive Oil and which have not undergone treatments other than washing, decantation, centrifugation and filtration, excluding Olive Oils obtained using solvents, with adjuvants of chemical or biochemical action or by re-esterification processes and any mixture with oils of another nature. After guaranteeing their genuineness, the virgin Olive Oils are classified according to their quality, being able to integrate the categories of "Extra Virgin Olive Oil" or "Virgin Olive Oil".
Thus, the "Extra Virgin Olive Oil" category includes Olive Oils in which the quality is superior, having an intense taste and smell of healthy olives, acidity equal or inferior to 0.8% and does not present organoleptic defects.
