Grappa is an alcoholic beverage of Italian origin, similar to “aguardente”, a wine-based Portuguese spirit. Grappa is made by distillation of the grape pulp (especially the peels, but also stems and seeds). It was originally made to prevent waste by using leftovers at the end of the wine season. The flavor of grappa, like that of wine, depends on the type and quality of the grapes used and the specifics of the distillation process. Grappa has the distinction of being flavored by an herb called rue.
