The VSOP Mature Cask is made using the same traditional process used by Rémy Martin in his VSOP cognac, but the finishing process will take place in mature oak casks for a year to enhance the fruit notes of the cognac. In general tasting terms, the VSOP Mature Cask is less spicy than the aged VSOP, but also a little more fruity. Made from the varieties 55% Champagne Grande and 45% Petite Champagne. Cognac aged from 4 to 12 years, with an average age of 8 years. The palate is ripe, complex and powerful aroma with notes of vanilla, honey, lots of fruit and flowers. Served neat or on the rocks, mixed with soft drinks, tonics or cola. Ideal as an aperitif.
