Out of the reach of the law, George Connell began distilling in secret at Burnfoot Farm in 1820 - the place of today's Glengoyne distillery. The hidden waterfall and its location in a small valley made it easy for George to escape fines from the taxmen of the time. He was not the first to distil illegally on that site - it is said that George learnt his craft from his grandfather. Rumour has it that Cochrane was the illegitimate son of one of the original Lang brothers, but no one has ever been able to confirm this fact. In any case, he was held in the highest regard and served in this house for thirty years. As Sherry's business was booming and there were many barrels of sherry imported at this time. These casks start to be used consistently to mature the Whisky and its taste changed completely, becoming smoother and more complex. What started as a way to save money is now the most expensive way to mature Whiskies and an essential part of Glengoyne's flavour.
