This fascinating wine is a blend of Sauvignon Blanc, Grechetto, Traminer, Sémillon and Riesling affected by Botrytis Cinerea (noble rot). The morning mists and local microclimate favour the development of this rot which reduces the water content of the grapes. The resulting concentration of sugars and aromas give the Muffato its special and unmistakeable flavour.

The Antinori family has been dedicated to wine production for over six hundredyears. Since then, in 1385, Giovanni di Piero Antinori became a member of the Arte Fiorentina dei Vinattieri. Throughout its long history, spanning 26 generations, the family has always managed this activity directly, making innovative and sometimes brave choices, but always maintaining an unchanged respect for tradition and territory.

Castello della Sala is located in Umbria, not far from the border with Tuscany, about 18 kilometres from the historic town of Orvieto. The grounds of the Castle, an imposing medieval manor house, extend over 500 hectares, 170 of which are planted with vines, halfway between the Paglia river and the summit of Mount Nibbio.

Castello della Sala was built in 1350 for Angelo Monaldeschi della Vipera, whose family had come to Italy in the wake of Charlemagne in the 9th century. Castello della Sala is an area highly suited to the production of white wines, with one exception: Pinot Noir, which finds in this terroir the ideal conditions to express itself at its best. The area is characterised by soil that tends to be clayey, calcareous, and rich in fossil shells, with vineyards well exposed to the sun and with excellent temperature ranges.
