La Fée XS Française is an absinthe distilled in the historic town of Pontarlier, the French homeland of absinthe. Production of the "green fairy" in the Region originated in the early 19th century and the finest absinthes were distilled there, until it was banned in 1915. The distillation methods of La Fée XS are exactly the same as those used at the time - an excellent selection of herbs and a high-quality wine alcohol base, resulting in an authentic absinthe. Due to its complexity, the distillation of La Fée X S Française is personally conferred by the head distiller. Only the best local herbs are used, which after harvesting, and as was done in the old days, are hung and dried upside down to preserve their qualities. Then each plant is selected by hand leaving only the stalk. In these ingredients, first aniseed, wormwood and wine alcohol of the highest quality are used, which together produce an intense and exotic aroma. The other herbs, meanwhile, are distilled in different stills. The two resulting liquids are finally distilled together and then stored in oak barrels to mature. It is a secret recipe of herbs, which is added at this stage that creates its green colour. It should be served using the traditional French serving of 4-6 parts ice water over sugar using an absinthe spoon.
