This Absinthe La Fee XS Suisse is an absinthe with a bluish colour, known as 'La Bleue ", with a smooth and delicate aniseed texture and elegant grassy palate. It is best enjoyed by slowly adding 3-4 parts ice water which opens up its beautiful milky texture and releases a range of intense aromas. Its perfect balance means that, as is tradition in Swiss absinthe, the addition of sugar is not necessary. La Fee XS Suisse is produced in the small town of Couvet in the Val-de-Travers region of Switzerland, where absinthe production began in 1792. The same recipe used at that time has been carried out to the letter using the same top quality ingredients and the entire distillation process is carried out by hand and carefully monitored to ensure consistency at every stage of production. The finest aromatic herbs, including mugwort, together with a base of grape alcohol are carefully distilled in small quantities, creating an absinthe that is highly elegant and perfectly balanced. Each distillation takes place in copper stills capable of producing just over 100 bottles. The wine alcohol, herbs and plants, including absinthe, are soaked in the distillers resulting in a very fragrant mixture. Just before the distillation process begins, natural spring water from the Val-de-Travers region of the Swiss mountains is added to reduce alcohol levels. The XS distilled to 76% ABV and is allowed to mature, after which it is purified with this natural mineral water to reduce its alcohol level to 53%.
