Carpe Noctem Douro Edition from vintage 2015 is produced with 50% Touriga Nacional, 30% Touriga Franca, 20% Tinta Roriz, planted in schist soils. This wine is produced on the basis of a careful selection of grapes, using manual harvesting. After fermentation in lagares, it completes a 12-month ageing period in French and American oak barrels. This ageing continued for a further 8 months in the bottle before being released onto the market. The wine has an intense ruby colour, showing a wide range of aromas ranging from fruity to floral, with mentholated notes. The good harmony between the acidity-depth ratio, makes this wine, long, fine and perfect for red meats, game and cheeses.
