Filliers Distillery has been refining its barrel ageing techniques since the 1960s. Cognac barrels made from French Limousin oak have been selected for this barrel aged Gin. The influence of cognac is undeniable.
As the Gin matures over four months, the citrus tones soften and the rounder, finer tones are enhanced. The wood releases some of its colour which is absorbed into the Gin. A powerful dry gin with subtle notes of oak and dried herbs with a touch of vanilla and the aroma of flowers and liquorice complete this gin. A robust aromatic spirit.
