Pisco refers to two different types of grape brandy produced in Peru and Chile. It is primarily made by distilling the must from grapes. The term "Pisco" has pre-Hispanic origins in Quechua, and it harks back to the "Villa de Pisco," located on the Peruvian coast. The Quechua name means "bird" or "bird settlement" and dates back to its founding in 1640 near an indigenous settlement of the same name.
