What distinguishes them:
Origin
Tequila: It can only be produced in the Tequila region, in the state of Jalisco, and in some surrounding areas.
Mezcal: It can be produced in various regions of Mexico, the best known being Oaxaca.
Agave Type
Tequila: It is made exclusively from Agave Tequilana (blue agave).
Mezcal: It can be produced with different types of agave, such as Espadín, Tobalá, among others, resulting in a greater diversity of flavours.
Production Process
Tequila: Agave is cooked in industrial ovens, which results in a cleaner, smoother flavour profile.
Mezcal: The agave is traditionally roasted in underground ovens, giving the mezcal a smoky and more complex flavour.
Flavour and Aroma
Tequila: It usually has a sweeter, fruitier flavour with floral notes.
Mezcal: It has earthy and smoky flavours, with a rich complexity that varies according to the type of agave used.
Alcohol Content
Both can have alcohol contents of between 35% and 55%, but mezcal tends to have a more robust flavour.
