Tequila is a remarkable drink, capable of expressing the nuances of its raw material like few other spirits in the world. The secret to its unique flavour lies in the distinctive blue agave plant, which gives Tequila a complex combination of flavours, with notes of fruit, pepper and spices. This plant, grown mainly in the Mexican province of Jalisco, but also in Guanajuato, Michoacán, Nayarit and on the coast of Tamaulipas, is the key to Tequila's unmistakable character. The blue agave takes a decade or more to mature, reflecting the soil and climate in which it grows, just like the grapes used to produce wine or cognac. Agaves from lower lands give rise to Tequilas with richer flavours, while those from higher lands, such as those in Jalisco, produce more perfumed Tequilas, with elegant, spicy touches.
