Eremitas Paulo de Tebas white, made from Rabigato, originates from a parcel at 400 metres altitude with quartz-influenced soils. Traditional vinification includes foot treading, spontaneous fermentation in concrete tanks and extended ageing of two years, including malolactic fermentation.
It shows a pale yellow colour and a subtle, deep aroma, with notes of almond, citrus and hints of rosemary. On the palate, it is austere and complex, with a firm texture and a saline, persistent finish.
