The CalCariO3 do Principal Chardonnay is a wine that demonstrates a meticulous winemaking process. After an initial ageing in French oak barrels for 6 to 9 months, the wine is transferred to large used wooden casks with a capacity of 2000 litres, where it remains for around 3 months before being bottled. The wine is placed on the market after up to 2 months in the bottle.

It has a lemon yellow colour with slight greenish reflections, and a captivating aroma that combines notes of burnt phosphorus with tropical aromas and wet stones. On the palate, it is medium-bodied, with vibrant acidity and a distinct linear minerality that evokes a refreshing ‘mine water’ sensation that lasts until the end of the tasting.
